Fermented Brown Basmati Rice
My husband came across an article about fermented rice being healthier. Below is the method I have been following and the rice cooks faster and tastes delicious.
Soaking instructions:
Sometime in the evening rinse 1 cup rice and soak it in 2 cups water.
Leave it covered and the next morning remove the soaking water and add another 2 cups water. Cover and soak until evening when you are ready to cook the rice.
*You can alternately start the soaking process in the morning and changing the water out in the evening. If for any reason you do not cook the soaked rice in 24 hours just place the rice in the fridge and it will be good for another couple of days.
Cooking instructions:
Discard the soaking water and add 3 cups water for 1 cup of soaked rice.
Cook uncovered on medium heat for about 40 minutes, then covered on low heat for 5 to 10 minutes until all the water has evaporated and the rice is well done. Cooking time and water may need to be adjusted.
I eat 1 serving size of rice daily with my meals, unless I am substituting the rice with 1 slice of Ezekiel brand low GI sprouted grain bread.
